Easy, dairy-free, and delicious, biscotti-like cookies with sprinkles, made without butter or milk, and baked only once.
Ingredients
- 2 ¾ cups all-purpose flour
- 1 cup white granulated sugar
- ¾ cup oil
- ¼ cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 large eggs
- 1 tablespoon vanilla extract or good imitation
- ¾ cup sprinkles or as desired
Instructions
- Combine flour, sugar, cornstarch, baking powder, and salt.
- Add oil, eggs, and vanilla and mix well until a dough forms.
- Gently mix or fold in sprinkles.
- Form into 2 logs on a cookie sheet lined with baking paper.*
- Bake for about 15-20 minutes.**
- Let cool for around 10 minutes or so, and then slice into bars of desired thickness.
Notes
*The logs need a couple of inches on either side to be able to spread, so use two cookie sheets if need be.
** If you want them to be soft, bake until they are no longer sticky and have just become solid. If you prefer crispy, bake until they have started to brown a little.
