Easy Salt and Pepper Kugel (Savory Noodle)

Salt and Pepper Kugel (or salt and pepper noodle kugel) is a Jewish Ashkenazi (Eastern European) savory noodle casserole.

It’s a terrific contrast to the typical noodle kugel (or classic lokshen kugel), which is made with cheese and is sweet.

It’s budget friendly and simple to make. One bowl, one pan, and only 3 main ingredients

And it’s dairy-free and vegan (parve)!

But if you want to make it dairy, just use butter instead of dairy-free margarine!

Salt and Pepper kugel blends the delicious combination of salt, pepper, and noodles into an amazing blend of flavors and is perfect for people who don’t like the traditional, more popular, sweet noodle kugel (simple known as lokshen kugel or noodle casserole) that I grew up on.

While the image looks like there is cheese in this dish, this recipe is actually dairy-free and vegan.

It refrigerates well, so you can make ahead and have later!

Great addition to kiddushes or shabbos lunches.

Or take for lunch to school or work and save your lunch money!

What does it mean when recipes say “to taste” about an ingredient?

When recipes say “to taste,” it means that you can put in as little or as much as you like to your own taste. Some recipes have many ingredients that a cook can adjust to their own taste when cooking (not so much when baking though).

The best way to calculate what your taste is with a recipe that you are not yet familiar with is to first taste the dish and then add the “to taste” ingredient GRADUALLY, a little at a time—a splash of this or a pinch of that—until the dish is just the way you like it.

Make sure to stir the ingredient after each time you add it so that the flavor will distribute evenly and become part of the dish. Then taste again. Repeat until you reach your personal preference.

Note: If you plan on using the recipe again, it is highly recommended to make a note of what and how much you added so that you can refer to it next time.

“Savory” refers to foods that are not sweet, such as foods that taste salty, spicy, or herbal.

I hardly ever meal plan, so I like to keep a cupboard full of seasonings, spices, veggies, and canned goods in my kitchen to use whenever the mood strikes.

But these are all you need to have on hand to make this recipe!

Ingredients

  • 1/2 pound of egg noodles, cooked as per instructions on package*
  • 3 eggs
  • 2 ounces soft dairy-free margarine
  • 1 1/2 teaspoons salt or to taste
  • 3/4 teaspoon pepper or to taste

Instructions

  1. Mix eggs, butter or margarine, salt, and pepper in a mixing bowl.
  2. Add the cooked noodles and combine well.
  3. Pour into a lined or greased 8" square or 9" round baking pan/dish.
  4. Place in an oven that has been preheated to 350°F and bake for approximately 45 minutes or until the kugel feels solid.
